End grain boards

The kitchen is the heart of the house and in my opinion the heart of the kitchen is the chopping board. There is no better chopping board than an end grain block made with the best materials and correct methods, as with all butcher blocks the knife is cutting into the fibers and not against. This is far better for the knife edge and the durability of the chopping board. End grain boards take a lot more materials and time to make but for such an important part of your life I think its worth doing properly. A maintained end grain board will last many life times, if cut into too deep the fibers will swell and repair themselves and due to the natural function of the wood they expel bacteria.
